Why are you now a b restaurant

There are a couple of my favorite places to eat that periodically slip into a "B" rating. I've asked one place, and the guy told me when its busy, its impossible to keep all the prep food in the refrigerator, but at those times, they go through it so fast, there is no time for it to spoil, and sometimes they come check at the just the wrong moment. Rating slips are not just for unsanitary conditions or "bugs", but what do you think? Are these just excuses or do some of you refuse to eat at a "B" or less rated place? I stand by Thai-hachapi 100%
